Bread & Olive Oil — A Simple Ritual
A simple way to taste olive oil.
Take a piece of good bread.
Preferably sourdough, with structure.
Warm it slightly. Not hot.
Pour a small amount of olive oil. Just enough to cover the surface.
Wait a few seconds.
Then taste.
Pay attention to the texture first.
Then the balance.
Then the finish.
Good olive oil does not need much.
It should feel clean, balanced and present.
This is where it starts.
